Dauset Trails Sugar Cane Syrup Workshop.
Big John the mule powered the mill. Sugar cane (ribbon cane) grown at Dauset Trails with additional purchased cane was fed into the mill. The mill, two large rotating drums, squeeze all the juice from the stalks. The juice is collected in a barrel and sent by pipe to the cooking pan under the syrup shed. The juice is slowly cooked over fire until the moisture is evaporated. Then, thick syrup is poured into jars. Ummmm. Pass the biscuits!
